- 1 cup butter, softened
- 11/2 cup packed brown sugar
- 11 egg
- 11 1/2 cup grated carrot
- 11 tsp vanilla
- 11 1/2 cup all-purpose flour
- 11 tsp cinnamon
- 11/2 tsp baking soda
- 11 1/2 cup bran flakes cereal
Cream butter with sugar until fluffy.
Beat in egg.
Stir in carrots and vanilla.
Combine flour, cinnamon and baking soda.
Stir into carrot mixture, mixing well.
Stir in cereal.
Drop spoonfuls about two inches apart onto baking sheets.
Bake in a 375 F oven for 10 - 12 minutes or until done.
