- 1 1/2 cups flour (I use a mixture of two, usually gluten free with 1 tsp or so of tapioca flour) - any kind works
- 1 tsp baking soda
- 2 tsp cinnamon
- 1 1/2 cups grated apple
- 1 packed cup dates, soaked in water to soften (I put the dates in a cup and just cover with enough water so that by morning it is all soaked up)
- 1 egg
- 1/3 cup apple butter
- 1 tsp lemon juice
- Grated lemon rind (optional)
- 1/3 cup butter
- 3/4 cup carob chips
Combine flours, cinnamon, and soda then mix in butter until crumbly.
Beat egg, then add apple butter.
Add lemon juice and optional rind to grated apples.
Add egg mixture and grated apples to flour mixture and combine well adding liquid if needed (I will add goat's milk) until flour is just moistened.
Then add dates and carob chips.
Stir well and drop onto cookie sheet.
Bake in 325 F oven for approximately 20 minutes.
