- 2 lg baking potatoes
- 1 Tbs onion, grated
- 1 egg
- 1/3 cup flour
- 1/4 cup favorite oil (I use coconut oil)
- Plain lowfat yogurt
- Your favorite applesauce
Peel and grate the potatoes onto paper towels. Squeeze out the moisture.
Combine the potatoes and the remaining ingredients, except the yogurt and applesauce.
Heat the oil in a skillet.
Drop the batter into the oil by spoonfuls.
Fry until crisp and brown on both sides.
Remove from the skillet and drain on paper towels.
Serve warm with plain yogurt and unsweetened applesauce.
