- 2 avocados halved, seeded, peeled, and finely chopped
- 1/4 cup minced onion
- 1/4 cup sliced green onion
- Roma tomatoes, finely chopped (you may want to seed them) or use one large regular tomato
- 1 Tbs olive oil
- 1 Tbs lemon juice
- Salt to taste
Prepare the vegetables as stated above.
Stir everything together and serve with tortilla chips or as a topping on haystacks (yummy veggie salad meal).
You will not need to add the lemon juice if you serve immediately; it is to keep the avocados from turning dark.
